This was Sunday. Time for barbecue. At least one of those occasions when a close relative visited our house. And so time for marinating and bamboo skewering the pork.
Here’s our own version of the barbecue sauce. This is the simple Pinoy barbecue sauce, not the commercial one, but homemade (lutong bahay as we call it). This is much better and more organic.
Barbecue sauce ingredients:
- 1/2 cup of Sprite
- 1/4 cup of soy sauce
- 1 tablespoon pepper
- 1/4 cup vinegar
- 1/2 cup banana or tomato catsup
- 1 bulb onion
- 3 cloves of garlic
Marinate 1 kilo cubed slices of pork with the barbecue sauce ingredients for 2 hours, much better if overnight.
Stick 4 pieces of pork into each stick.
Charcoal should be in flames by this time in a barbecue grill.
Then grilling time!
Wait for the meat to turn red or until you see a little black on the skin. Not too much. Burnt barbecue is not good.
You can’t avoid for some parts to turn black, otherwise you are grilling it on a more elevated position. For some commercial stalls, the meat are pre-boiled before grilling it so they don’t have to burn the skin to achieve a full cook.
But since we’re doing the homemade style, we want to be it more natural.
So there goes our barbecue Pinoy style. Mmmm. mmmmasarap!
